How did you come up with this collection?
The Martini is one of the world’s most iconic cocktails and The Wolseley is one of London’s favourite dining rooms, so pairing the two felt like a natural step. We were also inspired by the micro-cocktail trend. Our guests appreciate the craft, flavour and theatre of a great drink, but sometimes in a smaller, more approachable pour. We have a flight that allows for trying a variety of styles in one sitting, but for those who want to enjoy a single serve, they can be ordered individually. It’s a more relaxed, mindful way to join in on the ritual of the Martini.
Tell us about the different flavour profiles?
The collection draws on nature’s elements while preserving the timeless elegance of the Martini. There’s the briny freshness of Oyster and the smoky depth of Islay, the earthy richness of Truffle and the green, softly sweet Fig Leaf. At the heart of it all is the Vesper – our most iconic serve and a firm guest favourite – alongside the floral, refreshing Elderflower Martini 0.0% for those going alcohol-free.
What’s appealing about the micro cocktail trend right now?
These days, it’s about less is more – enjoying the craft and flavour of a great drink without the need for full serve. Tiny cocktails turn the ritual into a tasting adventure, letting you sample different styles, compare notes and find new favourites, all while keeping things light. It’s a playful way to enjoy the artistry of the bar – and it couldn’t be a better fit for The Wolseley’s after-eight offering.

Why does the bar at The Wolseley lend itself so well to cocktail hour?
Our bar has that perfect balance of elegance and ease – the golden light, the Art Deco details, the quiet theatre of a Martini being stirred and served. It’s a space that invites you to slow down and really enjoy your drink, whether it’s one Martini or a flight of three, all while watching the rhythm of London life pass by just beyond the windows.
Why is Martini so perennially appealing?
It’s simplicity done to perfection – elegant, adaptable, and always a little bit glamorous. It’s as much about the ritual as the drink itself: placing the order, answering the classic questions – gin or vodka, dry or wet, twist or olive – then watching the bartender as they chill the glass, pour the spirit, and add the perfect garnish with quiet passion. And finally, that first crisp sip. In mini form, that heritage and allure is retained, just in a lighter, more approachable way.

We wanted to bring some of The Wolseley’s best loved dishes into a smaller format to match the mini-Martini concept, creating perfect little accompaniments for cocktail hour. Curated by our chef, Alessandro, the selection includes a mini Welsh rarebit, rich and comforting; a mini steak tartare toastie, full of depth and texture; and a mini mashed avocado on muffin, fresh and creamy. Each bite is designed to complement the drinks without overpowering them, making for a balanced and distinctly Wolseley experience.
What does cocktail hour mean to you?
It represents a moment to gather, sip, talk and just enjoy being in the present. For us, it’s as much about the atmosphere as the drink itself.
